Stuffed mushrooms with quinoa
200 g cooked quinoa (150 gr. raw )
40 gr Onions
1-2 cloves garlic
150 gr mushrooms (select a large white mushrooms )
30 gr Corn
2-3 tablespoons parsley ( chopped )
1 tablespoon olive oil
50 g of cheese (optional)
salt and pepper to taste
Soak 1 cup quinoa with 2 cups of hot water for about 20-25 minutes. Drain and rinse with cold water. Boil 2 cups of water and add the soaked quinoa. Simmer for 12-15 minutes. Preheat the oven to 200 C. Remove the mushrooms insides and place the mushrooms in a baking tray, upside down (like baskets). Bake for about 5 minutes, remove and leave them on a side . In a small frying pan, heat olive oil and saute the chopped onion and garlic . When the onion is soft, add the corn and cook for another 2 minutes. Add quinoa, stir another -two minute, add 2 tablespoons water and chopped parsley and remove from heat. Season with salt and pepper and add optional little cayenne pepper.
Fill mushrooms well with the mixture and cover with grated cheese * . Put back in the oven and bake for about 10-12min or until cheese is melted and has a golden color.
* The recipe can be executed without cheese.
