Salad with quinoa, carrots and cashew
Quinoa is seed like crop grown for its edible seeds. It is a pseudo-cereal because it belongs to the family Chenopodiaceae (to which also spinach and beet belongs) and not to the family Cereal (like wheat) and is one of the plants with high nutritional value. Quinoa is a seed and not grain, and has useful properties similar to those of a number of leaf vegetables such as spinach.At 100g quinoa raw has approximately (percentage of the recommended daily dose), 65% phosphorus, 55% magnesium, 35% iron, 14% protein and 7% dietary fiber.

NECESSARY PRODUCTS 4 servings: 400 g. Carrots 100 g. Quinoa 100 g. Raw cashews 20 g. Butter parsley and basil olive oil balsamic vinegar
METHOD OF PREPARATION In a saucepan put the quinoa, water and butter. The ratio between the quinoa and water is 1: 2. Bring to a boil after you reduce the heat and cook for about 15-20 minutes. Drain and cool finished quinoa. Clean carrots, parsley and basil. Grate the carrots. Chop the basil and parsley. In a mortar crush the cashews. In a mixing bowl, combine quinoa, carrots, parsley and basil. Mix well. Season with olive oil, balsamic vinegar and salt. Enjoy your meal!
