Delicious Avocado Egg Salad

Ingredients:

  • 4 large boiled eggs
  • 4 boiled egg whites
  • 1 avocado, cut into 1/2-inch pieces
  • 1 Tbsp mayonnaise
  • 1 Tbsp fat free plain yogurt
  • 1/2 tablespoon chopped chives
  • 2 teaspoons wine vinegar
  • 1/2 tsp Salt
  • pinch freshly ground black pepper

Directions:

Combine the egg yolks with the avocado, mayonnaise, fat free plain yogurt, chives,  wine vinegar, salt and black pepper. Mash with a fork. Combine with egg whites and adjust salt as needed.
